Jerusalem artichokes - organic

Jerusalem artichoke is a close relative to sunflower. It can be eaten raw like a radish, in salads, baked in its skins or roasted, in soups or creams, sautéed in a wok Chinese-style, or juiced. Once cut, it is important to soak it in lemon water to prevent oxidation.
