Organic Spinach

Spinach can be prepared a thousand ways, in salads, soups, poached or incorporated into dishes such as quiche. Avoid overcooking. The best is to just steam them one or two minutes so that they retain some firmness. Briefly spin them and voila! Older, larger leaves will be fried in a pan in olive oil one minute before being used in salads. Certified by Quebec-Vrai.
