RED KURI SQUASH
Bright orange skin and yellow-orange flesh. This squash has a thick, rather floury flesh with a pronounced sweet, chesnut-like flavor. Can be cooked whole in the oven, but it must be punctured in a few spots to avoid bursting while cooking. Ready when you feel that the skin has softened (about 1:30). After the flesh is seperated from the skin, it can be served mashed, seasoned with garlic, ginger or nutmeg, and a little oil. Red Kuri can also be eaten in soups, in stews or curries.
