Multicolored carrots with fresh mint leaves
Ingredients:

Multicolored medium carrots |
2 liters |
Water |
2 tbsp |
Olive oil |

Mint leaves |
To taste |
Salt and ground black pepper |
Instructions:
- Wash and peel the carrots. Keep them whole.
- Bring to a boil salted water.
- Cook carrots until tender (al dente *) then drain.
- In a large bowl, combine carrots, salt, pepper, olive oil and chopped mint leaves.
- Goes well with roasts and poultry.
*al dente: crunchy to the bite
