Baba Ghanoush

Ingredients:

2 Big Eggplants
2 cloves Garlic, crushed
4 Tbs. Tahini
Juice of 1 lemon
1/2 tsp. Ground cumin
2 tps. Chopped parsley
To taste Salt and pepper
To top 2 Black olives cut in halves

Instructions :

  • Prick the eggplants with a fork , cut them in halves and put the part that is cut on a grill.
  • Grill them until their skin puffs up and they become tender.
  • Peel them and squeeze them to take out as much juice as possible.
  • Blend the insides with the garlic and gradually add tahini and lemon juice.
  • Put it in a bowl and add the rest of the ingredients.
  • Decorate with olives.
