Warm salad

Ingredients:

1 Chopped Escarole
1 Onion, diced
1 Tomato, diced
2 Eggs, cooked and kept warm
2-3 Slices bacon
3 c. tablespoons Wine vinegar or balsamic vinegar or wine

Instructions:

  • Slice the boiled eggs.
  • Cook two or three slices of bacon, remove the fat.
  • In the still hot pan that was used to cook the bacon, fry wine vinegar or balsamic (the vinegar is used to remove the bitter taste of chicory).
  • Sprinkle the salad with vinegar.
  • Mix together and serve.
