Green tomato cake

Ingredients:

3 Eggs
2 cups Sugar (can be 1 cup white and 1 cup brown or 1 cup sugar and 1 cup maple syrup)
3 cups Flour (can be a mix of white and whole wheat flour)
1 cup Ground nuts
1 cup Raisins
1 tsp Baking powder
1 tsp Baking soda
1 tsp Salt
1 tablespoon Vanilla
2 cups Grated green tomatoes (remove excess juice)
1 cup Oil

Instructions:

  • Beat eggs, oil, salt, vanilla, sugar and tomatoes in one bowl.
  • Mix together flour, nuts, raisins, baking powder and baking soda.
  • Add liquid ingredients to dry ingredients and mix with a spoon.
  • Pour into 3 bread pans.
  • Bake for 1 hour at 350 degrees.
