Green tomato ketchup

Ingredients:

3 lbs Sugar
1 big basket Green tomatoes finely chopped
3 Large onions finely chopped
1 pint Vinegar
1 Celeri foot
1 Cauliflower
A little bit Cabbage

In a bag:

1 tablespoon Clove
1 tablespoon Cinnamon
1 teaspoon Powdered clove
To taste Coarse salt

Instructions:

  • Let the tomatoes, onions and the coarse salt sit over night.
  • The next day, strain the tomatoe juice in a cloth.
  • Mix the tomatoes with all the ingedients and boil until desired consistancy.
  • N.B.  Do not cover the pot for the evaporation.
