Carrots and caraway braised kale

Ingredients:

2 tsp Caraway
1 tbsp Butter
1/4 cup Shallot
3 cups Chopped green or red kale
1/4 cup Pumpkin seeds
To taste Sunflower sprouts
1 cup Carrot juice

Instructions:

  • Reduce by half the carrot juice with caraway seeds.
  • Wash the kale, remove the middle of the stem and slice.
  • In a large skillet, melt the butter and sauté the shallots, add the kale and reduced carrot juice.
  • Cover and cook over medium heat for 2 minutes.
  • Warm pumpkin seeds.
  • Serve kale sprinkled with pumpkin seeds and sunflower sprouts.
