Lettuce soup

Ingredients:

4 cups Chicken stock
2 cups Potatoes, cut in dice
1 Boston or other lettuce
To taste Salt and pepper
1 pinch Cayenne pepper
1/2 cup Plain yogurt
1 cup Partly skimmed milk
To garnish Lettuce leaves, chiseled

Instructions:

  • In a pot, bring chicken stock to a boil;  add potatoes and cook for about 20 minutes.
  • Add lettuce and let simmer for 1 minute.
  • Season with salt, pepper and cayenne pepper, and blend in a blender.
  • Meanwhile, in a bowl, mix yogurt and milk, and pour in blender.
  • Serve very hot, garnished with lettuce leaves.
