Alsace style onion pie

Ingredients:

1 Pie dough
6 Slices Bacon
1 tbsp Olive oil
5 Onions, thinly sliced
2 Garlic cloves
250 g Mushroom
1 tbsp Fresh rosemary
1 cup Shredded fontina cheese (hard cheese)
1 cup Shredded Swiss cheese

Instructions:

  • Cook the bacon until crisp. Remove, drain and keep 1 tbsp of fat to cook the onions.
  • Cook the onions and garlic until onions are transparent.
  • Add the mushrooms, rosemary, salt and pepper.
  • Turn off the heat and add the crumbled bacon.
  • Spread half of the cheese into the pie shell.
  • Pour onions and sprinkle with the remaining cheese.
  • Bake at 350 degrees F for 25 minutes.
