Tabbouleh

Ingredients:

1 cup Fine bulgur (cracked wheat)
3 Green onions, chopped
1 cup Fresh parsley, chopped
1 1/2 cups Tomatoes, seeded and diced
3 tbsp. Lemon juice
1/4 cup Olive oil
2 tbsp. Fresh mint, chopped
To taste Salt and pepper

Instructions:

  • In a bowl, place the bulgur and cover it with hot water. Soak for 30 minutes. Drain in a colander. Leave aside.
  • Mix the remaining ingredients in a salad bowl, then add the bulgur. Mix. Salt and pepper.
  • Let stand 2 hours before serving, if possible.
