Stuffed green peppers
Ingredients:

Medium green peppers |

Butter |

Big chopped onion |

Stalks celery, chopped |

Ground beef or mix of beef and veal |
2 Tbs. |
Fresh ground parsley |
To taste |
Salt and ground pepper |

Medium-sized tomato cut in dices |
½ cup |
Tomato juice or sauce |
2 cups |
Cooked rice |
1/2 cup |
Grated medium cheddar cheese |
Instructions:
- Cut the top of the peppers, remove the seeds and the inside and wash them.
- Season with salt and steam them for 5 minutes.
- Melt the butter and gild the vegetables; add the ground meat, stir and cook for 5 minutes.
- Season, add the other ingredients except the cheese, mix and adjust the seasoning.
- Stuff the peppers and sprinkle them with grated cheese.
- Bake in the oven at 350oF until the peppers are tender, i.e. 35 to 40 minutes.
- You can serve them that way or with tomato sauce.
