Stuffed green peppers

Ingredients:

6 Medium green peppers
4 Tbs. Butter
1 Big chopped onion
2 Stalks celery, chopped
1 pound Ground beef or mix of beef and veal
2 Tbs. Fresh ground parsley
To taste Salt and ground pepper
1 Medium-sized tomato cut in dices
½ cup Tomato juice or sauce
2 cups Cooked rice
1/2 cup Grated medium cheddar cheese

Instructions:

  • Cut the top of the peppers, remove the seeds and the inside and wash them.
  • Season with salt and steam them for 5 minutes.
  • Melt the butter and gild the vegetables;  add the ground meat, stir and cook for 5 minutes.
  • Season, add the other ingredients except the cheese, mix and adjust the seasoning. 
  • Stuff the peppers and sprinkle them with grated cheese.
  • Bake in the oven at 350oF until the peppers are tender, i.e. 35 to 40 minutes.
  • You can serve them that way or with tomato sauce.
