Pickle spices

Ingredients:

4 Mace strips
2 Cinnamon sticks
2 Small red hot peppers
2 Small pieces of ginger root
2 Tablespoons of the following; cloves, coriander seeds, mustard seeds, whole black pepper grains.

Instructions:

  • Break mace strips, cinnamon and peppers, chop ginger root and mix all the spices in a bowl.
  • Transfer into a sterilised jar, seal and label jar.

To use the spice mix, put required amounts of spice into a cheese cloth, which can be removed
