Pumpkin jam

Ingredients:

1 lb Pumpkin
2 cups Sugar
Juice Of two lemons
Rind Of 1 orange or lemon
A few Dices of ginger confit or
1 cup Chopped walnuts

Instructions:

  • With a food processor or a knife, cut pumpkin in thin chips, and mix with sugar in a glass bowl and let soak in fridge, covered, for 24 hours.  Add juice of lemons as well as lemon or orange rind.
  • If you wish, add a few dice of ginger (confit) or chopped walnuts.  Bring the mix to boiling in a stainless steal saucepan and stimmer for about 20 minutes.
  • Put in sterilized jars and seal.
