Pumpkin jam
Ingredients:
1 lb |
Pumpkin |
2 cups |
Sugar |
Juice |
Of two lemons |
Rind |
Of 1 orange or lemon |
A few |
Dices of ginger confit or |
1 cup |
Chopped walnuts |
Instructions:
- With a food processor or a knife, cut pumpkin in thin chips, and mix with sugar in a glass bowl and let soak in fridge, covered, for 24 hours. Add juice of lemons as well as lemon or orange rind.
- If you wish, add a few dice of ginger (confit) or chopped walnuts. Bring the mix to boiling in a stainless steal saucepan and stimmer for about 20 minutes.
- Put in sterilized jars and seal.
