Rhubarb mousse

Ingredients:

2 cups Rhubarb cut in dice
1/4 cup Sugar
2 sachets Unflavored gelatine
1/4 cup Cold water
1/4 cup Boiling water
3 cups Vanilla ice cream
1 teaspoon Lemon rind
1/2 teaspoon Nutmeg

Instructions:

  • In a saucepan, cook the rhubarb and the sugar for 10 minutes.
  • In a bowl, dissolve the gelatine in the cold water, then add the boiling water.
  • Mix unil the gelatine is well dissolved.  Incorporate the sweetened rhubarb.
  • Let cool, then add the other ingredients.
  • Put in the refrigerator for 1 hour.
  • Garnish with whipped cream and a slice of rhubarb, if desired.

Yield: 8 servings.
