Pork or chicken Yet-Ca-Min

Ingredients:

3/4 lb. Pork or chicken fillets
2 Tbs. Vegetable oil
2 Large carrots, in julienne
1 Small onion, chopped
2 Tbs. Fresh grated ginger
1 cup Sliced mushrooms
2 Cloves garlic, crushed
2 Cups pea pods, trimmed
2 Tbs. Dry sherry
2 Tbs. Soya sauce
1/2 tsp Sesame oil
3/4 lb Yet-Ca-Min noodles
To taste Fresh coriander chopped (optional)

Instructions:

  • Cut pork or chicken in thin strips of 1 1/2 in. X 1/2 in.
  • In a deep pan or a wok, heat oil thoroughly.
  • Quick fry the meat 2 minutes or until golden brown, stir evenly; remove from pan and set aside.
  • In the same pan, quick fry carrots, onion and ginger 3 minutes, stirring constantly (add more oil if necessary).
  • Add mushrooms and garlic and quick fry for 1 minute, stirring constantly.
  • Add pea pods, sherry and meat and cook with the cover on, 3 to 4 minutes or until done.
  • Add Soya sauce, sesame oil and mix thoroughly.
  • Meanwhile,  add Yet-Ca-Min noodles to salted boiling water and cook until barely tender.
  • Drain and separate with fork in four hot service plates.  Serve pork or chicken sauce on top of cooked noodles and garnish with coriander, if desired.

Yields : 4 portions.
