Tomato soup

Ingredients:

1 Tbsp. Butter
1 (2 c.) Large leek, sliced
4 c. Tomatoes cut into chunks
5 Carrots (1 ½ c.), sliced
2 Cloves minced garlic
1 10 oz Can beef consommé
1 7 oz Can tomato sauce
1 tsp. Sugar
2 c. Milk
3 Tbsp. Fresh basil or 2 tsp. dried basil

Instructions:

  • Saute vegetables and garlic in butter for 3 minutes. Salt and pepper.
  • Add beef broth, tomato sauce and sugar.
  • Cover and cook for 15 minutes.
  • Add milk and basil. Reheat.
  • Pour into blender jar or food processor and liquefy.
