Vegetable salsa

Ingredients:

8 Jalapeno peppers
1.75 L (7 cups) Prepared tomatoes
500ml (2 cups) Coarsely chopped onions
3 Cloves garlic, minced
1 can (156 ml) Tomato paste
175ml (3/4 cup) White vinegar (1/2 for our taste)
125 ml (1/2 cup) Chopped fresh coriander, lightly packed
2 ml (1/2 tsp) Ground cumin

Instructions:

  • Remove the seeds and chop the jalapenos end.
  • Slightly cook, peel and coarsely chop tomatoes.
  • Mix peppers, tomatoes, onions, peppers, garlic, tomato paste, vinegar, coriander and cumin in a large enameled or stainless steel saucepan.
  • Bring the mixture to a boil and let boil gently for about 30 minutes, or until salsa reaches the desired consistency.

Spicy Salsa:

  • Add 5 ml (1 tsp) cayenne to the other ingredients before cooking.
