Stuffed zucchini flowers

Ingredients:

150g Potatoes
100g Green beans
100g Small zucchini
50g Grated parmesan cheese
40g Butter
25-30 Zucchini flowers
1 Egg
To taste Olive oil
1 Clove of garlic
A little Basil, salt and pepper

Stuffing:

  • Wash and cook zucchinis, potatoes and green beans.  Rince in a strainer and mash thoroughly.
  • Put all contents in a bowl, add 1 beaten egg, parmesan cheese, melted butter, 20 gr of olive oil, finely chopped garlic and basil, salt and pepper, stir contents.

Preparation of flowers:

  • Wash and empty flowers while maintaining entire petals then let dry.  Stuff flowers with stuffing and close flowers.  Drop in a well-oiled frying pan and roll flowers to ensure they are well coated.  Put in oven at 250 degrees for 15 minutes.  Remove and serve.

Yields : 6 portions.
