Asparagus Soup

Ingredients:

3 Tbs. Butter
3 Tbs. Flour
3 c. Chicken stock
20oz Asparagus
To taste Salt and pepper
1 tsp. Chive, minced
To taste Cream 35%
A few Asparagus heads

 Instructions:

  • In a frying pan, melt butter and add flour.
  • Let cook for 2 minutes.
  • Sprinkle with chicken stock, and mix well.
  • Add the asparagus;  season with salt, pepper and chive.  Stimmer for 20 minutes.
  • Blend in blender or food processor.
  • Pour in each bowl and add a few drops of cream.
  • Top with heads of asparagus and serve.

Yield: around 6 cups.
