Penne with smoked salmon and green beans

Ingredients:

450g Fresh green beans, trimmed and cut or asparagus cut into pieces (1 inch).
1 tablespoon Olive oil
1 Onion, finely chopped and a clove of garlic
¾ cup White wine
1 cup Evaporated milk or 35% cream and milk
250g Cream cheese, softened
180g Smoked salmon, sliced into strips
1 tsp Dried dill
2 tablespoons Capers
To taste Salt and pepper
450g Penne, cooked or fettuccine

Instructions:

  • In boiling salted water, cook green beans 4 minutes or until crisp-tender. Drain well and set aside.
  • In a skillet, heat oil and sauté the onion 2-3 min. Add wine and bring to boil.
  • Boil over medium high heat 3-4 minutes or until most of the liquid has evaporated.
  • Add evaporated milk and mix. When the milk starts to boil, add the cream cheese and stir with a whisk until the mixture is smooth. Add green beans.
  • Add smoked salmon, dill, capes, salt and pepper and mix. Serve the sauce with the pasta.

Makes 4 servings.
