Chocolate and beet cake

Ingredients:

3 Eggs
1 c. Sugar
2 ½ c. Mashed beets (already cooked and pureed manually or with a food processor)
⅔ c. Sunflower oil
1 Tbsp. Vanilla
Your choice  ⅔ c. Fair Trade cocoa or 4 ounces unsweetened chocolate
1 ½ c. white flour
1 ½ c. Whole wheat flour
2 Tbsp. Baking powder
¼ tsp. Salt

Insctructions:

  • Cook the beets and purée them.
  • Butter and flour a square pan.
  • Beat sugar and eggs in a blender. Add the beet purée, vanilla, oil and melted chocolate (in a bain-marie over low heat, if using chocolate). Otherwise, add cocoa, baking powder and flour to the wet mixture.
  • Bake at 350 ° for 40 to 50 minutes, until a fork inserted in the middle of the cake comes out clean. Do not overcook.
