Broccoli frittata

Ingredients:

4 Dried tomatoes
5 Eggs
50 ml Soy milk or cow's milk
½ Bunch brocoli
A few Fresh basil leaves or a pinch of dried basil
2 tablespoons Chopped fresh parsley
1 Teaspoon Olive oil
50g Cheese comté
To taste Salt

Instructions:

  • Soak tomatoes in hot water for 15 minutes, drain and chop.
  • In a bowl, beat eggs with milk, parsley and basil. Add tomatoes and broccoli cut into pieces, add some salt.
  • Over medium heat, heat a large frying pan nonstick, add oil and then the previous preparation and cook until eggs are almost cooked.
  • Slide the mixture into a baking dish, sprinkle with grated cheese and broil for about 5 minutes.
  • Be careful not to burn the cheese, the preparation should have a light golden color.
  • The frittata can be eaten hot, warm or cold accompanied by a green salad.

Yield : 4 portions.
