Chinese cabbage soup

Ingredients :

½ Chinese cabbage
1 Onion
1 Carrot
1 Potato

To taste Salt
100g (3-4 slices) Bacon pieces « lardons »
To add aroma Bay leaf, thyme or rosemary.

Insctructions :

  • Peel the onion, the carrot and the potato. Cut in round slices.
  • Run chinese cabbage leaves under water to clean them, but don’t let them soak, this reduces vitamin content.
  • Cut the leaves in slices.
  • Cut the bacon in slices.
  • Put all the vegetables, the bacon and the herbs in a big saucepan.
  • Cover with water, salt lightly and cook 20 minutes.
  • If you have a pressure-cooker, it’s faster. Don’t cover completely with water (the cabbage contains a lot already). After the pressure is up, let cook for 7 minutes. 
  • To finish, mix everything, with the cooking water, in the blender or mixer.  A hand-mixer works well too.
  • Serve with shredded gruyère cheese and croutons for your guests.  The melted cheese in the soup is simply delicious.

Options : you can add almost any kind of vegetable in this soup (leek, peas, etc)

Gives a liter and a half of potage.
