Chinese cabbage soup
Ingredients :

100g (3-4 slices) |
Bacon pieces « lardons » |
To add aroma |
Bay leaf, thyme or rosemary. |
Insctructions :
- Peel the onion, the carrot and the potato. Cut in round slices.
- Run chinese cabbage leaves under water to clean them, but don’t let them soak, this reduces vitamin content.
- Cut the leaves in slices.
- Cut the bacon in slices.
- Put all the vegetables, the bacon and the herbs in a big saucepan.
- Cover with water, salt lightly and cook 20 minutes.
- If you have a pressure-cooker, it’s faster. Don’t cover completely with water (the cabbage contains a lot already). After the pressure is up, let cook for 7 minutes.
- To finish, mix everything, with the cooking water, in the blender or mixer. A hand-mixer works well too.
- Serve with shredded gruyère cheese and croutons for your guests. The melted cheese in the soup is simply delicious.
Options : you can add almost any kind of vegetable in this soup (leek, peas, etc)
Gives a liter and a half of potage.
