Cantaloupe soup

Ingredients:

1 Average-sized cantaloup, ripe, peeled and chopped
60 ml Plain yoghurt
60 ml Orange juice
250 ml Sour cream
5 ml Chopped fresh basil
5 ml Grated orange peel
2 ml Fresh ginger, peeled and grated
15 ml Cognac or brandy

Instructions:

  • Place all ingredients in food processor, blend until homogeneous.
  • Sieve.
  • Pour into a large bowl and refrigerate for at least 3 hours.
  • Serve into chilled bowls.

Variation:

Replace cantaloup by honeydew melon or 375 ml strawberries.

Gives about 750 ml / 3 cups.
