Carrot cookies
Ingredients:

Shortening |
| 1 cup |
Brown sugar |
| ½ cup |
Granulated sugar |
| 1 |
Egg |
| 1 cup |
Cooked carrots, mashed |
| 2 cups |
Flour |
| ½ tsp |
Salt |
| 1 ½ tsp |
Baking soda |
| ¾ cup |
Raisins |
| 1 tsp |
Vanilla |
Instructions:
- Bring shortening and sugar into cream.
- Add the vanilla and cooled mashed carrots.
- Sift flour, measure and add salt and baking soda.
- Sift again, add the dry ingredients, sift and beat until becomes a soft dough.
- Chop the raisins and stir into batter.
- Drop in teaspoons of mixture on the well greased sheet or oiled baking pan.
- Allow 2-3 inches of space between the patties.
- Cook in oven at 350°F, about fifteen minutes.
Makes about 3 dozen cookies and a half.
