Carrot cookies

Ingredients:

½ cup Shortening
1 cup Brown sugar
½ cup Granulated sugar
1 Egg
1 cup Cooked carrots, mashed
2 cups Flour
½ tsp Salt
1 ½ tsp Baking soda
¾ cup Raisins
1 tsp Vanilla

Instructions:

  • Bring shortening and sugar into cream.
  • Add the vanilla and cooled mashed carrots.
  • Sift flour, measure and add salt and baking soda.
  • Sift again, add the dry ingredients, sift and beat until becomes a soft dough.
  • Chop the raisins and stir into batter.
  • Drop in teaspoons of mixture on the well greased sheet or oiled baking pan.
  • Allow 2-3 inches of space between the patties.
  • Cook in oven at 350°F, about fifteen minutes.

Makes about 3 dozen cookies and a half.
