Multicolored carrots with fresh mint leaves

Ingredients:

16 Multicolored medium carrots
2 liters Water
2 tbsp Olive oil
6 Mint leaves
To taste Salt and ground black pepper

Instructions:

  • Wash and peel the carrots. Keep them whole.
  • Bring to a boil salted water.
  • Cook carrots until tender (al dente *) then drain.
  • In a large bowl, combine carrots, salt, pepper, olive oil and chopped mint leaves.
  • Goes well with roasts and poultry.

*al dente: crunchy to the bite
