Sweet corn soup

Ingredients:

1 Tbs. Butter
1 Onion, chopped
1 Medium-sized potato, sliced
1 1/2 cup Chicken stock
2 cups Kernel corn
To taste Salt
1 1/2 cups Milk
A few Kernels of corn
To Taste Paprika

Instructions:

  • In a saucepan, melt butter and sauté the onion and potato.
  • Add stock and corn, and salt.
  • Bring to a boil; cover and stimmer until the potato is tender.
  • Remove from heat; let it cool for a few minutes.
  • Pour into a blender or food processor and blend for about 30 seconds. 
  • Put back in saucepan, add milk and heat without boiling 8 to 10 minutes.
  • Top with a few kernels of corn and paprika, then serve.

Yield: around 5 cups.
