Sweet corn soup
Ingredients:

Butter |

Onion, chopped |
1 |
Medium-sized potato, sliced |
1 1/2 cup |
Chicken stock |
2 cups |
Kernel corn |
To taste |
Salt |
1 1/2 cups |
Milk |
A few |
Kernels of corn |
To Taste |
Paprika |
Instructions:
- In a saucepan, melt butter and sauté the onion and potato.
- Add stock and corn, and salt.
- Bring to a boil; cover and stimmer until the potato is tender.
- Remove from heat; let it cool for a few minutes.
- Pour into a blender or food processor and blend for about 30 seconds.
- Put back in saucepan, add milk and heat without boiling 8 to 10 minutes.
- Top with a few kernels of corn and paprika, then serve.
Yield: around 5 cups.
