Warm salad
Ingredients:

Chopped Escarole |
1 |
Onion, diced |
1 |
Tomato, diced |
2 |
Eggs, cooked and kept warm |
2-3 |
Slices bacon |
3 c. tablespoons |
Wine vinegar or balsamic vinegar or wine |
Instructions:
- Slice the boiled eggs.
- Cook two or three slices of bacon, remove the fat.
- In the still hot pan that was used to cook the bacon, fry wine vinegar or balsamic (the vinegar is used to remove the bitter taste of chicory).
- Sprinkle the salad with vinegar.
- Mix together and serve.
