Chili oil

Ingredients:

100g (3½ oz) Small fresh red chilies, stemmed
4 cups Olive oil, sesame oil, corn or grape seed
2 tablespoons Hot or mild paprika

Instructions:

  • Finely chop the chillies in the food processor, then put them in a saucepan with the oil of your choice (ideally a mixture of olive and grape seed oil).
  • Gently heat the preparation up to 120°C (245°F) and let simmer for about 15 minutes. Remove from heat and let cool.
  • Add the paprika and stir the mixture and let it cool completely. Filter. Fill sterilized bottles of prepared oil. This oil is ready to be served.
