Carrots and caraway braised kale
Ingredients:
2 tsp |
Caraway |
1 tbsp |
Butter |
1/4 cup |
Shallot |
3 cups |
Chopped green or red kale |
1/4 cup |
Pumpkin seeds |
To taste |
Sunflower sprouts |
1 cup |
Carrot juice |
Instructions:
- Reduce by half the carrot juice with caraway seeds.
- Wash the kale, remove the middle of the stem and slice.
- In a large skillet, melt the butter and sauté the shallots, add the kale and reduced carrot juice.
- Cover and cook over medium heat for 2 minutes.
- Warm pumpkin seeds.
- Serve kale sprinkled with pumpkin seeds and sunflower sprouts.
