Kale pie with pine nuts and raisins

Ingredients:

2 lb Kale
2 tbsp Olive oil
3 Peeled and chopped garlic cloves
Approx. 1/4 cup Water
1/4 cup Raisins
Pinch Cinnamon
1/4 cup Pine nuts roasted
To taste Salt and tamari sauce (soy)

 Instructions:

  • Separate the kale from its stem, wash and remove the large ribs (they can be used, ribs and stems to make a vegetable broth or soup).
  • Coarsely chop and set aside.
  • In a large skillet, heat oil and sauté garlic.
  • Slowly add the kale and water, raisins, cinnamon and salt to taste.
  • Cover and cook over medium-high heat, taking off lid and stirring every minute, until the kale is cooked (5-8 minutes).
  • Add a few tablespoons of water if the mixture becomes dry or if it sticks.
  • Add pine nuts, salt and tamari or serve as is or over cooked pasta. This recipe is suitable for 1 pound of pasta.
