Radicchio and caramelized onion sausages

Ingredients:

1 Onion (s) red (s), thinly sliced
1 Radicchio (red chicory), thinly sliced
1 tsp Unsalted butter
4 tsp Olive oil
3 Chicken, Toulouse or mild sausage(s)
To taste Salt
To taste Pepper
1 tbsp Wine vinegar
1 tbsp Balsamic vinegar

Instructions:

  • Keep the serving plates in the oven at the lowest setting so they are warm when you serve.
  • Prepare the vegetables: Thinly slice the onions and radicchio. Set aside.
  • Heat the butter and half the oil in a skillet over medium-low heat. Sauté the onions until they are softened and golden, stirring frequently, about 20 minutes.
  • While cooking the onions, prepare the sausages. Prick sausages in several places with a fork. Place in a saucepan, cover with water, bring to boil and simmer 5 minutes. Remove from water and wipe dry.
  • Heat the remaining oil over medium heat in a second pan. Sauté the sausages until browned, about 5 minutes, turning during cooking. Keep warm while cooking onions.
  • Add the radicchio to the onions and cook until wilted, about 5 minutes. Add both vinegars and cook over medium-high heat until the liquid is absorbed, or 1 min. Add salt and pepper to taste. Serve onion mixture with radicchio and sausages.
