Farfalle salad with tomatoes and spinach

Ingredients:

500g Farfalle or fusilli
3 Onions
60g Dried tomatoes, cut into strips
50g Baby spinach, chopped
4 tbsp Roasted pine nuts
1 tbsp Oregano

Sauce:

60 ml Olive oil
1 coffee spoon Chopped fresh chilli
1 Clove crushed garlic
To taste Salt and pepper

Instructions:

  • Cook the pasta in a large saucepan of boiling salted water. Drain and rinse thoroughly with cold water.
  • Transfer to a bowl.
  • Finely chop the onions. Put them in the bowl with the tomatoes, spinach, pine nuts and oregano

Sauce:

  • In a jar, stir together oil, pepper, garlic, salt and pepper and shake vigorously.
  • Pour sauce over salad; mix well and serve immediately.

Makes 4 to 6 servings.
