Strawberries pudding


2 cups Fruits
1/4 cup to 1/2 cup Sugar
1 tsp Lemon zest
1/3 cup Butter
2/3 cup Sugar
1 Egg
1 cup Flour
1 tsp Baking powder
Pinch Salt
1/3 cup Milk
1 tsp Vanilla


  • Put the fruit, sugar and lemon zest in a buttered mold; set aside.
  • Mix flour, baking powder and salt; set aside.
  • Mix butter with sugar until the mixture is uniform. Add the egg and vanilla, beating until mixture is light. Gradually add the dry ingredients alternately with milk; beat until smooth.
  • Using a large spoon, place the dough on the fruit and sugar mixture. Using a fork, gently level the top of the dough. Bake in oven until a toothpick comes out clean when inserted into center of cake.
  • Serve hot, plain, with 15% cream or plain yogurt.

Gives 6 to 8 servings.
